The dried flower of the hibiscus plant has a cranberry-like flavour and is a great, tangy addition to sauces, salsas and margaritas, adding bright, festive colour. Our bar manager Ramona suggests making a hibiscus and lemon sweet tea, which works either hot or cold. Hibiscus is high in vitamin C, and reported to soothe cold symptoms, promote proper kidney function, help digestion and lower fever. We use hibiscus for cocktails and aqua frescas as well in our smoky arbol sauce.
