Piloncillo is raw, unrefined evaporated sugar cane juice. It comes to us from an indigenous cooperative in San Luis Potosi in Mexico. The growers make their piloncillo by traditional methods of heat and evaporation. Piloncillo is rich in calcium, potassium, magnesium, copper, and iron. It has been discovered to have unique medicinal properties and is prescribed for use in the Ayurvedic system of medicine. Health benefits aside, piloncillo is delicious.
