The tamarind tree produces fruit that look like large curved bean pods. When the pods are broken open, they reveal seeds surrounded by a juicy pulp. This pulp has a musky, sweet and sour flavour. Introduced to Mexico by the Spanish, Tamarindo has been enthusiastically adopted. Tamarind pulp has many health benefits. It is a good source of antioxidants, vitamin C, B vitamins, fiber, potassium and magnesium. In Mexico it’s believed to reduce fever, aid digestion and lower cholesterol. We use tamarind in our aqua frescas, Salsa Habanero and caramel flan.
