An Ancho is a dried poblano chilli. Due to its thick flesh, it is mild and rich in flavour and adds a smoky sweetness to any dish. Ancho chillies have a deep red colour and wrinkled skin with a flavour reminiscent of raisins. Ancho can be used whole, or ground into powder which is then used in spice rubs or for making mole, enchilada sauce and chili.
